It's fall y'all! And you know what that means... pumpkin, pumpkin EVERYWHERE.

While some of those try-hard pumpkin flavored seasonals have taken things too far (Pumpkin Spice Spam? No thank you!), below you'll find a simple, delicious, and healthy fall favorite we can all really get behind 🤤⁣⁣ 

 

Pumpkin Protein Sammy (Under 250 Calories)

This recipe comes from a close friend and certified health and fitness badass, Cassy Roop. Cassy is a local Charlottesville NASM Certified Personal Trainer, Nutrition Coach, Figure Competitor, and Fitness Vlogger who has inspired countless people throughout our community tto pursue progress over time with consistency dedication. Recipe:

  • 23g of protein powder (I used Prolific Isolate Vanilla because it’s my favorite!)⁣⁣
  • 10g of Kodiak Cakes
  • 125g of liquid egg whites
  • 60g of canned Libby's pumpkin 
  • 1/4 tsp of baking powder 
  • 1 slice of Borden Dairy fat free Swiss Cheese 

 

Directions:

Mix all but 100g of egg beaters together and cook in a mini waffle maker until done (makes 2 mini waffles)⁣⁣ Cook remaining egg beaters in a pan and top with 1 slice of fat free cheese.⁣⁣ Assemble your Sammy and enjoy! 🥪🤤⁣⁣ ⁣⁣A sweet and savory yummy brekky! ENJOY!
